Tart Cherry Chia Pudding (CherryT)
Ingredients: 1 cup frozen Montmorency tart cherry, ¼ cup Montmorency tart cherry juice, ¼ cup of chia seeds, 1 cup coconut milk, 1 tsp vanilla extract, ¼ teaspoon ground nutmeg, and ¼ tsp ground cinnamon.
Optional garnish: Dried Montmorency tart cherries, dark chocolate chips or cacao nibs.
Cooking Method: In a bowl, combine chia seeds, Montmorency tart cherry juice and coconut milk. Soak the mixture for 30 minutes until a thick gel have been prepared. Take a food processor, pour chia seed mixture into the blender and the rest of the ingredients in it. Blend the mixture until creamy texture appears. Pour the prepared mixture in a bowl or glass and garnish with chocolate sprinkles.
